· Kontos #4 Fillo Dough - thin and pliable, it is ideal for desserts that require a lighter color and soft texture when baked, such as Middle Eastern Baklava.  Very flexible for making individually hors d'oeuvres and bite-sized desserts.

· Kontos #5 Fillo Dough -
bakes to a deep golden brown color and provides a crispy finish to baklava. Also may be used to wrap items like shrimp or vegetables for individual appetizers.  Works well for panned items like trays of spanakopita and baklava.

· Kontos #7 Fillo Dough - it is very flexible for folding and rolling. Ideal for making large individual appetizers, entrée, or desserts like beggar's pouches, Wellington's, and triangular Baklava.  When baked provides a medium golden brown color.

· Kontos #10 Fillo Dough - the  perfect thickness for apple strudel and Mediterranean country-style baked items. Fillo just like gia-gia used to make.

Sliced grilled chicken breast with Caesar salad, served in baked Kataifi shell (or cornucopia). A consommé with tourné vegetables in a baked Kataifi bird's nest. And the traditional Mediterranean dessert, Classic Kataifi pastry.
