Traditional
Pizza
Pre-heat oven to 450°F. Spoon 2 tablespoons of tomato or pizza sauce over the top of the
Pita and spread almost to the edges. Sprinkle about 1/4-cup of mozzarella cheese over the
sauce and add any topping (like sliced mushrooms or sliced peppers). Place on a cookie
sheet and put in oven for about 5 minutes or until cheese melts. Remove from oven and
slice into four slices. Serve hot.
Two Bean & Cheese Sandwich
In a bowl combine some drained (cooked or canned) green beans and kidney beans. Add some
thinly sliced onion. Pour about 2-3 tablespoons of Italian Salad Dressing over the top and
toss gently. Set bowl aside.
Place a Pita on a cookie sheet and cover with a slice or two of cheese. Put cookie sheet
into a pre-heated 400°F oven for about 5-minutes or until cheese melts.
Remove from oven and spoon the bean mixture to cover half of the Pita. Fold in half and
then cut in half.
Variations: Add some cooked (or canned) sliced mushrooms, or add some chopped
tomato.
Grilled
Cheese Pita Sandwich
Place some sliced or shredded American cheese on a Pita. Cover with a second Pita. Brush
the exposed side of the Pita sandwich with some butter or a little oil. Place the Pita
sandwich (buttered side down) on to a hot skillet or frying pan. Heat until the bottom has
browned and the cheese is beginning to melt. (Check by using a spatula to lift the bottom
edge of the Pita.) Turn the Pita sandwich over on its' other side and continue to cook
until the other side has browned. Remove from the skillet and slice into wedges.
Variation: Add a slice or two of tomato or some crumbled cooked bacon, between
the Pita along with the cheese.

Tuna Melt
Prepare some tuna fish salad and spoon over the top of a Pita. Cover with some cheese
slices. Place on a cookie sheet and place in a pre-heated 400°F oven (or in a toaster
oven) until cheese has melted.
Variation: Substitute chicken salad for the tuna fish salad. Add a slice or two
of tomato under the cheese.
Pita Dog
Cook the hot dogs in boiling water, on a grill, or in a toaster oven. Spread
mustard or ketchup on one side of the Pita. Place hot-dog over the mustard and roll up.
Variation: Make a Pita Dog using cooked link sausage, then spread some bar-b-q
sauce and roll-up.Veggie Pizza
Pre-heat oven to 400°F. Mix any combination of fresh cauliflower, carrots, broccoli,
peas, squash, cut string beans together. Use about 1/2-cup per Pita. Spread vegetable over
the top. Add some shredded American or cheddar cheese. Place on a cookie sheet and put in
oven for 10-12 minutes or until cheese melts. Remove from oven and slice into four wedges.
Serve hot.
Variation: Pre-heat oven to 350°F. Substitute drained leftover cooked vegetables
to make the Veggie Pizza and bake for about 10-12 minutes or until cheese melt. Other Suggestions:
Use Kontos Flatbread to make sandwiches, roll-ups, in place of regular bread and buns.
